Zone Recipe: Tilapia Vera Cruz

I enjoyed this zoney-treat a few months back in a dusty town near Hermosillo, Mexico that I have since made in several more variations of the original. Delicious and easy, tilapia is a sweet tasting fish that goes well with just about anything!
Tilapia Vera Cruz:
1 lb Tilapia fillets
olive oil
white onion
garlic
red pepper
green pepper
tomato sauce or fresh tomatoes
jalapeno
salt and pepper to taste
*Habanero sauce optional!
For Sauce: Heat 3 tablespoons of olive oil in saucepan. Add garlic, onions, jalapeno, olives (capers optional). As soon as ingredients start to sizzle, add the tomatoes and salt and pepper. Simmer for 10 to 15 minutes.
For Tilapia: Pat dry fish fillets and season with salt and pepper. In skillet add remaining 2 tablespoons of oil with medium to high heat and swirl in pan. Add seasoned fillets and sear about 2-3 minutes per side or until golden. Hold in warm oven until all fillets are cooked.
Serve together in some warmed corn tortillas!

Smoked Paprika Roasted Salmon with Wilted Spinach
1/8 cup orange juice
1/2 tsp grated or zested orange peel
1 tbsp + 1 tsp olive oil
1 lb wild salmon
1 tsp thyme
1/2 tbsp smoked paprika (look for "Chiqilin" brand)
1/2 tsp cinnamon
1 tsp. brown sugar or maple syrup
dash of salt
mix OJ, 1 tbsp oil, 1/2 tsp thyme and add fish. Marinate in fridge 30 min or more
mix paprika, cinnamon, orange peel, maple syrup, salt and remaining thyme in another bowl
take out salmon put on baking pan, throw out any remaining marinade, rub top with the paprika mixture
bake @ 400F for 10-15 min
meanwhile steam a pantload of spinach and serve the fish on a bed of wilted spinach
mmmmmmm.

The Zone, eh? Lean protein that includes fish? Sounds suspect to me. I think French Fries are a perfectly acceptable meal all by themselves. Don't get me started about ice cream, either. If you do, Lau will get upset.
Here's my favorite Zone recipe:
Timmy T's Low-Carb Superhealth Mush
3 cups firmly packed brown sugar
1.5 cups high fructose corn syrup
1 16 ounce container of honey
1 16 ounce container of chocolate syrup
1 cup white flour
3 cups Crisco
5 Tbsp apricot nectar
5 Tbsp Vanilla extract
Mix together well and top with a generous helping of chocolate chips. Makes 2 servings.
I ran this by Dr. Loren Cordain (of Paleo Diet fame) to make sure that it was Paleolithically correct and he suggested the inclusion of chocolate syrup. He knows his stuff, so who am I to argue? I recommend this dish before, during, and after workouts. It also makes a wonderful breakfast, lunch, or dinner.
