Tis' the season for pumpkin carving! As Halloween approaches these plump little suckers are popping up in windows and porches everywhere. This Halloween, think twice before you toss out your window ornament! Maybe you can try turning it into dinner or better yet, a post workout meal instead!

Here are a few ideas:

After you've gutted your jack-o-lanterns use the seed to make a tasty pesto sauce:

Pumpkin Seed Pesto:

1 cup pumpkin seeds
1 bunch cilantro
2 Tbsp. olive oil
2 garlic cloves
Add salt and lemon to taste

Toast pumpkin seeds in a dry frying pan until they turn golden brown. Then in a food processor or blender combine all the ingredients and blend until smooth.

Basic Baked Pumpkin Halves

1 3-3 1/2 pound Pumpkin
Unrefined Coconut Oil to grease pan
Cinnamon or Apple Pie Spice

1. Preheat oven to 350. Wash and scrub pumpkin and cut in half leaving the skin intact. Remove pumpkin guts. Dust with cinnamon or pie spice.

2. Arrange squash cut side down in 1 or 2 cake pans or rimmed baking sheets. Bake uncovered in the center of the oven until tender and easily pierced with a fork, 30-40 minutes.

3. Quarter large halves. Scoop out baked pumpkin meat and discard the skin. Garnish with chopped nuts or butter.

1/2 cup: 55 calories, 1g protein, 11g carbs (4g fiber), 1g fat

The good: It is also a good source of Vitamin E (Alpha Tocopherol), Thiamin, Niacin, Vitamin B6, Folate, Iron, Magnesium and Phosphorus, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Riboflavin, Potassium, Copper and Manganese.

Now, I'm not too bright, but I don't understand this part of the recipe:

Later in the recipe, it says:

What's the point of scrubbing the pumpkin skin if you are going to discard it? That seems like needless work to me. However, I never really understood bathing either, so this may contribute to my confusion.

what's that Brad? You're probably one of those skiiers that always wears a one piece, only carves the groomers and goes to the lodge to watch football when it starts snowing.

I LOVE the lodge. Never stuffy, always smells fresh, and there is so much fun stuff to do because 3000 acres of snow gets boreing quick! I could spend all day in there.

On the subject of snow....I have an Arbor Element snowboard used one season, a size 162 which is built for a taller/heavier person or someone shorter who wants to go fast. The bindings are Burton Mission which should fit between a men's 8-10.5 shoe. Even if the bindings don't fit, it is still a good board. All for $150

The food is also healthy, delicious and very reasonably priced!

Did your last experience with "snow" happen to take place at a "Ski Lodge" on Monument Boulevard in Concord, California?

Usher also prefers to hang out in the ski lodge to be closer to his boos.

Journey, another thought - did you allow for a break-in period for whatever it was you were riding up there?

And also, didn't you just have a birthday? I heard the lodge one of the only places to find the elusive spotted snow-cougar. Can you confirm this rumor cuz I may have to check it out.

I am definitely getting the itch for some skiing. I bought an Apple Bottom neon green onesy so as to make an impression on the hill this season.
